Marmalade and Bitters

  • 500g blood oranges
  • 1 large cooking apple
  • 2 sprigs rosemary
  • 3 cloves
  • 1.5L water
  • 650g sugar
  • 40ml Orange bitters

Blend the orange and apple together and poach in the water together with the rosemary and the cloves for an hour. Double strain and add sugar to the liquid, reduce down to 1litre. Take off the heat and add bitters, tasting as you go.

Add to sterilised jars. Enjoy with bread and cheese, in a toastie, with roasted duck or stirred into mayonase for a dip.
