Orange Bittered Cake
Ingredients:
Cake
200g flour
100g cocoa powder
100g granulated sugar
65g brown sugar
1.5 tsp baking powder
1/2 tsp salt
zest from one orange
1.5 tsp Orange bitters
350ml water
Chocolate Spread
95g chocolate
40g butter
1 tsp Orange bitters
1 pinch Achill Island sea salt
Method
Preheat oven to 175 C
Line an 8” cake pan with baking parchment and rub with butter
Whisk the flour, both sugars, baking powder and salt in a bowl
Add water, oil, orange zest and bitters
Pour into the pan and bake for 40 minutes.
A skewer inserted should emerge clean
Chocolate Spread
Add the chocolate and butter to a bowl and melt over a saucepan of boiling water
Take off the heat when melted and stir in the bitters
When the cake is cool, spread it with chocolate spread and a sprinkle of sea salt
Bittered Popcorn
Ingredients
2 tsp cinnamon
2 tsp salt
65g sugar
1 tbsp Aromatic Bitters
500g popped popcorn
Preheat an oven to 160C
Melt the butter, sugar, salt and bitters in a small saucepan
Put the popcorn in a mixing bowl and coat it with the glaze
Spread the popcorn on a baking tray and bake for 4 minutes, stir and bake for another 4 minutes
The glaze hardens as it cools
Bittered Vinegar
Ingredients
1 tbsp cider vinegar
2 tsp olive oil
1 tsp honey
Pinch Salt
1 tsp Smoked Pear Bitters
Whisk together ingredients
Bittered Heavy Cream
Add a few drops to cream before whipping
Use to top pie, coffee or cake
Herbaceous Simple Syrup
100g caster sugar
100ml water
1 tsp Aromatic bitters
Boil the water and add the sugar and stir to dissolve. Once dissolved add the bitters
